- 1/2 cup shredded cheddar cheese
- 2 tbsp almond flour keto binder
- 1 tbsp taco seasoning sugar-free
Skillet Sauce & Topping
- 1/2 cup sugar-free salsa
- 1 cup shredded Mexican blend cheese
- 1/4 cup chopped green onions
Instructions
- In a bowl, mix the ground beef, egg, almond flour, cheddar, and taco seasoning until combined.
- Form into small meatballs, about 1 to 1.5 inches in size.
- Heat a skillet over medium heat and brown the meatballs on all sides, about 8 minutes.
- Add sugar-free salsa to the skillet and simmer for 5 minutes to coat the meatballs.
- Top with shredded Mexican cheese, cover, and cook until the cheese melts, 2–3 minutes.
- Garnish with chopped green onions and serve hot.
