Instructions
In a bowl, mix the ground beef, egg, almond flour, cheddar, and taco seasoning until combined.
Form into small meatballs, about 1 to 1.5 inches in size.
Heat a skillet over medium heat and brown the meatballs on all sides, about 8 minutes.
Add sugar-free salsa to the skillet and simmer for 5 minutes to coat the meatballs.
Top with shredded Mexican cheese, cover, and cook until the cheese melts, 2–3 minutes.
Garnish with chopped green onions and serve hot.
Notes
