Ingredients

Meatballs

  • 1 lb ground beef 80/20 preferred
  • 1 large egg
  • 1/2 cup shredded cheddar cheese
  • 2 tbsp almond flour keto binder
  • 1 tbsp taco seasoning sugar-free

Skillet Sauce & Topping

  • 1/2 cup sugar-free salsa
  • 1 cup shredded Mexican blend cheese
  • 1/4 cup chopped green onions

Instructions

  • In a bowl, mix the ground beef, egg, almond flour, cheddar, and taco seasoning until combined.
  • Form into small meatballs, about 1 to 1.5 inches in size.
  • Heat a skillet over medium heat and brown the meatballs on all sides, about 8 minutes.
  • Add sugar-free salsa to the skillet and simmer for 5 minutes to coat the meatballs.
  • Top with shredded Mexican cheese, cover, and cook until the cheese melts, 2–3 minutes.
  • Garnish with chopped green onions and serve hot.

Notes

For extra spice, add sliced jalapeños or a pinch of cayenne. Serve with avocado or a small dollop of sour cream for added healthy keto fats.
