Ingredients

Main Ingredients

  • 1 lb ground beef 85% lean preferred
  • 4 cups cauliflower rice fresh or frozen
  • 1 small onion diced
  • 2 cloves garlic minced
  • 2 tbsp coconut aminos or tamari for a soy-free option
  • 1 tbsp sesame oil
  • 1 cup bell pepper diced (red or green)
  • 1 tbsp olive oil for cooking
  • 1/2 tsp ground ginger
  • to taste salt and pepper

Optional Garnish

  • 1 tbsp green onions chopped
  • 1 tsp toasted sesame seeds

Instructions

  • Heat olive oil in a large skillet or wok over medium-high heat. Add ground beef and cook until browned, breaking it apart with a spatula.
  • Add diced onion, bell pepper, and garlic. Cook for 3–4 minutes until vegetables are softened.
  • Stir in cauliflower rice, coconut aminos, sesame oil, ground ginger, salt, and pepper. Mix well to combine.
  • Cook for another 5–7 minutes, stirring frequently, until cauliflower rice is tender and most of the moisture has evaporated.
  • Taste and adjust seasonings as needed. Remove from heat and top with green onions and sesame seeds before serving.

Notes

This stir fry is perfect for meal prep — it reheats beautifully in the microwave or skillet. Try adding zucchini or mushrooms for extra bulk without extra carbs.
