Ingredients

  • 2 pounds cauliflower, riced (fresh or thawed from frozen)
  • 3 tablespoons unsalted butter

  • 1 1/2 cups sharp cheddar cheese, freshly shredded
  • 1/3 cup grated Parmesan cheese
  • 1/4 cup shredded mozzarella cheese (optional, for extra stretchiness)
  • 1 teaspoon garlic powder
  • 3/4 teaspoon onion powder
  • 1/4 teaspoon smoked paprika (optional, for color and depth)
  • 1/4 teaspoon fine sea salt (or to taste, added at the end)
  • 1/4 teaspoon black pepper (or to taste)

For finishing (optional)

  • 2 tablespoons fresh parsley, finely chopped for garnish

Instructions

  • If using fresh cauliflower, cut it into florets and pulse in a food processor until it resembles rice, or finely grate it on a box grater, then pat the riced cauliflower dry with a clean kitchen towel to remove excess moisture.
  • If using frozen riced cauliflower, thaw completely, then squeeze out as much liquid as possible in a clean kitchen towel so the finished dish is not watery.
  • Place a large skillet over medium heat and add the butter, letting it melt and begin to foam slightly.
  • Add the riced cauliflower to the skillet and stir to coat it evenly in the melted butter.
  • Cook the cauliflower rice, stirring occasionally, until it turns tender with a slight bite and most of the moisture has cooked off, about 6 to 8 minutes.
  • Sprinkle in the garlic powder, onion powder, smoked paprika if using, black pepper, and half of the salt, then stir well to distribute the seasonings.
  • Pour in the heavy cream and stir until the cauliflower rice is coated and the cream is warmed through and gently simmering.
  • Reduce the heat to low and add the cheddar, Parmesan, and mozzarella if using, stirring constantly until the cheeses are fully melted into a smooth, creamy sauce that clings to the cauliflower rice.
  • Taste the cheesy cauliflower rice and add more salt if needed, adjusting the seasoning until the flavors are balanced and savory.
  • Remove the skillet from the heat and let the cauliflower rice sit for 1 to 2 minutes to thicken slightly as the sauce sets around each grain.
  • Transfer the cheesy keto cauliflower rice to a serving dish, sprinkle with chopped fresh parsley if desired, and serve warm as a comforting side or main dish.

For the best texture, always squeeze out extra moisture from the cauliflower rice so the cheese sauce stays creamy instead of watery. Freshly shredded cheese melts more smoothly than pre-shredded cheese coated in starches, which can add unwanted carbs.
