Ingredients

Coconut Mixture

  • 2 cups unsweetened shredded coconut
  • 1/2 cup coconut oil melted
  • 1/3 cup powdered erythritol or favorite keto sweetener
  • 1 tsp vanilla extract

Chocolate Drizzle (Optional)

  • 1/4 cup sugar-free chocolate chips melted

Instructions

  • In a mixing bowl, combine shredded coconut, melted coconut oil, powdered erythritol, and vanilla. Mix until evenly coated and sticky.
  • Press mixture firmly into an 8×8 pan lined with parchment paper.
  • If desired, drizzle melted sugar-free chocolate over the top.
  • Refrigerate for at least 30 minutes, then slice into bars.

Notes

Store bars in the refrigerator or freezer to keep them firm. Add almond butter or chopped nuts for flavor variety while staying keto.
