Ingredients

For the creamy keto blue cheese dressing

  • 3/4 cup sour cream full-fat
  • 1/2 cup mayonnaise sugar-free, preferably avocado oil or olive oil based
  • 3/4 cup blue cheese crumbles divided, use a good-quality, crumbly blue cheese
  • 2 tablespoons apple cider vinegar or to taste
  • 1 tablespoon water more as needed to thin for dressing consistency
  • 1 teaspoon garlic powder
  • 3/4 teaspoon onion powder
  • 1/4 teaspoon fine sea salt or to taste, blue cheese saltiness can vary
  • 1/4 teaspoon freshly ground black pepper or to taste

Instructions

  • Add the sour cream and mayonnaise to a medium mixing bowl and whisk until smooth and well combined.
  • Stir in about half of the blue cheese crumbles, mashing some of them gently with the back of a spoon or whisk to help thicken and flavor the base.
  • Whisk in the apple cider vinegar, water, garlic powder, onion powder, salt, and black pepper until the dressing is smooth and creamy.
  • Fold in the remaining blue cheese crumbles to leave some larger pieces throughout the dressing for extra texture.
  • Adjust the consistency by adding a small splash of water at a time for a pourable salad dressing or leaving it thicker for a dip or burger sauce.
  • Taste and adjust seasoning with additional salt, pepper, or vinegar if desired, keeping in mind that the flavors will intensify as the dressing chills.
  • Transfer the dressing to an airtight container or mason jar, cover, and refrigerate for at least 1 hour to allow the flavors to meld before serving.

Notes

This dressing will thicken as it chills, so thin with a splash of water or unsweetened almond milk just before serving if you prefer a looser consistency for salads. For a milder flavor, reduce the blue cheese slightly and add a bit more sour cream; for extra funk, increase the blue cheese and a touch more vinegar.
