Ingredients

Salmon

  • 2 fillets salmon skin-on
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Lemon Greens

  • 4 cups spinach or mixed greens
  • 1 tbsp butter
  • 1 tbsp lemon juice

Instructions

  • Season salmon fillets with salt and pepper. Heat olive oil in a skillet over medium-high heat.
  • Place salmon skin-side down and cook 5–6 minutes until skin is crispy. Flip and cook 2–3 minutes more until done.
  • In the same skillet, melt butter and add spinach. Sauté 1–2 minutes until wilted, then stir in lemon juice.
  • Serve crispy salmon over lemon greens and spoon pan juices on top.

Notes

Add garlic or red pepper flakes to the greens for extra flavor. Skin-on salmon ensures a crisp finish and more healthy fats.
