Instructions
Season salmon fillets with salt and pepper. Heat olive oil in a skillet over medium-high heat.
Place salmon skin-side down and cook 5–6 minutes until skin is crispy. Flip and cook 2–3 minutes more until done.
In the same skillet, melt butter and add spinach. Sauté 1–2 minutes until wilted, then stir in lemon juice.
Serve crispy salmon over lemon greens and spoon pan juices on top.
Notes
