Instructions

  • Crack the eggs into a mixing bowl, add the heavy cream, salt, and black pepper, and whisk until the mixture is smooth, slightly frothy, and well combined.
  • Place a nonstick skillet over medium heat and add the first tablespoon of butter or olive oil, allowing it to melt and coat the bottom of the pan.
  • Add the sliced mushrooms to the hot skillet and cook, stirring occasionally, until they release their moisture and become golden brown around the edges, about five to seven minutes.
  • Season the mushrooms with garlic powder and a small pinch of additional salt and pepper, then cook for another minute until fragrant and transfer them to a small plate.
  • Reduce the heat to medium low, add the second tablespoon of butter to the same skillet, and let it melt and gently coat the pan without browning too much.
  • Pour the egg mixture into the skillet and let it sit undisturbed for a short moment until the edges just begin to set, then gently push the cooked edges toward the center while tilting the pan so uncooked egg flows to the edges.
  • When the top surface of the eggs is still slightly soft but mostly set, evenly scatter the cooked mushrooms over one half of the omelette and sprinkle with shredded cheese if using.
  • Cover the skillet briefly with a lid for one to two minutes until the cheese melts and the eggs finish setting to a soft, fluffy texture without becoming dry or rubbery.
  • Use a spatula to carefully fold the bare half of the omelette over the mushroom side, slide the omelette onto a plate, and garnish with fresh herbs and sliced avocado if desired.
