  • 8 slices mozzarella cheese low-moisture, part-skim
  • 16 slices pepperoni
  • 1/4 cup sugar-free pizza sauce
  • 1/2 tsp Italian seasoning

Instructions

  • Preheat oven to 375°F and line a baking sheet with parchment paper.
  • Lay the mozzarella slices onto the baking sheet, spacing them slightly apart.
  • Bake for 5–6 minutes, until the edges begin to bubble and brown slightly.
  • Remove from the oven, place 2 pepperoni slices on each piece, and add a thin smear of sugar-free pizza sauce.
  • Sprinkle with Italian seasoning, then gently roll each slice into a tight roll-up while warm.
  • Let cool slightly to set before serving.

Notes

For extra crispiness, broil the cheese for 1 minute before adding toppings. Try adding olives or jalapeños for more flavor while keeping carbs low.
