Ingredients

For the beef and broccoli

  • 1 1/2 pounds flank steak thinly sliced against the grain
  • 4 cups broccoli florets cut into bite-size pieces
  • 2 tablespoons avocado oil or light olive oil, divided
  • 1 tablespoon toasted sesame oil
  • 1 teaspoon fine sea salt divided, plus more to taste
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon red pepper flakes optional, for heat

For the keto stir-fry sauce

  • 1/2 cup coconut aminos
  • 1/4 cup beef broth or chicken broth, unsalted or low sodium
  • 3 cloves garlic minced
  • 1 tablespoon fresh ginger finely grated
  • 2 tablespoons rice vinegar unseasoned
  • 1 teaspoon granulated erythritol or preferred keto sweetener, to taste
  • 1/2 teaspoon xanthan gum for thickening

For garnish and serving

  • 2 tablespoons sesame seeds optional
  • 2 tablespoons green onions thinly sliced
  • 2 cups cauliflower rice cooked, for serving under the bowls if desired

Instructions

  • Slice the flank steak thinly against the grain and pat it dry with paper towels, then season it with half of the salt and all of the black pepper.
  • Bring a medium pot of salted water to a boil, add the broccoli florets, and blanch until bright green and crisp-tender, about 2 minutes, then drain and rinse under cold water to stop the cooking.
  • In a mixing bowl, whisk together the coconut aminos, beef broth, minced garlic, grated ginger, rice vinegar, erythritol, remaining salt, and red pepper flakes until well combined.
  • Sprinkle the xanthan gum lightly over the sauce while whisking constantly until it is fully dispersed with no clumps and the sauce begins to thicken slightly, then set it aside.
  • Heat 1 tablespoon of avocado oil in a large skillet or wok over medium-high heat until shimmering.
  • Add half of the sliced beef in a single layer and sear, stirring occasionally, until just cooked through and browned on the edges, about 3 to 4 minutes, then transfer to a plate.
  • Repeat with the remaining avocado oil and remaining beef, searing until browned and then returning all of the beef and any accumulated juices to the skillet.
  • Add the blanched broccoli to the skillet with the beef and toss to combine over medium heat.
  • Pour the prepared sauce over the beef and broccoli and cook, stirring frequently, until the sauce is glossy and clings to the meat and vegetables, about 2 to 3 minutes.
  • Drizzle the toasted sesame oil over the stir fry, toss well to coat, and adjust seasoning with additional salt or red pepper flakes to taste, then remove from the heat.
  • If using cauliflower rice, divide the cooked cauliflower rice evenly among 4 meal prep containers to form a base.
  • Spoon the beef and broccoli mixture evenly over the bases in the meal prep containers, making sure each serving has plenty of sauce.
  • Sprinkle the tops with sesame seeds and sliced green onions, let the bowls cool to room temperature, then seal and refrigerate for up to 4 days.
  • To reheat, warm a bowl in the microwave on medium power until heated through or reheat gently in a skillet over medium-low heat, adding a splash of broth if needed to loosen the sauce.

Notes

For the best texture, slice the beef as thinly as you can while it is still slightly firm, or partially freeze it for about 20 minutes before cutting. Blanching the broccoli separately keeps it bright and crisp-tender even after reheating. Coconut aminos are naturally a bit sweeter than soy sauce, so adjust or omit the keto sweetener to match your taste. These bowls can be enjoyed on their own or served over cauliflower rice to mimic takeout-style beef and broccoli without the carbs, and each portion stays keto-friendly while delivering satisfying protein and fiber for busy weekdays.
