1cupshredded Parmesan cheese

6cupschopped romaine lettuce
1cupcooked chicken breastsliced or diced
1/4cupshredded Parmesan cheese
Keto Caesar Dressing
1/2cupmayonnaise
2tbsplemon juicefresh
1garlic cloveminced
1tspDijon mustard
2tbspParmesan cheesegrated
1/4tspblack pepper
Instructions
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Spoon small mounds of shredded Parmesan onto the sheet pan and flatten lightly. Bake 5–7 minutes until golden and crisp. Cool completely.
In a bowl, whisk together mayonnaise, lemon juice, garlic, Dijon mustard, grated Parmesan, and pepper to make the dressing.
Assemble romaine lettuce, chicken, and shredded Parmesan in a large salad bowl.
Toss salad with dressing, then top with Parmesan crisps right before serving.
Notes
For extra richness, add anchovy paste to the dressing. Parmesan crisps may also be made in an air fryer for convenience.
