Ingredients

Parmesan Crisps

  • 1 cup shredded Parmesan cheese

Salad

  • 6 cups chopped romaine lettuce
  • 1 cup cooked chicken breast sliced or diced
  • 1/4 cup shredded Parmesan cheese

Keto Caesar Dressing

  • 1/2 cup mayonnaise
  • 2 tbsp lemon juice fresh
  • 1 garlic clove minced
  • 1 tsp Dijon mustard
  • 2 tbsp Parmesan cheese grated
  • 1/4 tsp black pepper

Instructions

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Spoon small mounds of shredded Parmesan onto the sheet pan and flatten lightly. Bake 5–7 minutes until golden and crisp. Cool completely.
  • In a bowl, whisk together mayonnaise, lemon juice, garlic, Dijon mustard, grated Parmesan, and pepper to make the dressing.
  • Assemble romaine lettuce, chicken, and shredded Parmesan in a large salad bowl.
  • Toss salad with dressing, then top with Parmesan crisps right before serving.

Notes

For extra richness, add anchovy paste to the dressing. Parmesan crisps may also be made in an air fryer for convenience.
