Keto Chocolate Mug Cake

This quick keto chocolate mug cake is a rich, fudgy single-serve dessert made in the microwave in just a few minutes. Almond flour creates a dense, satisfying crumb, unsweetened cocoa powder delivers deep chocolate flavor, and a keto sweetener such as erythritol or stevia keeps the cake low in carbs without sacrificing sweetness. An egg binds everything together for a moist, tender texture you can enjoy warm straight from the mug with minimal cleanup.

Equipment

  • Microwave-safe mug
  • fork or small whisk
  • measuring spoons

Ingredients

For the keto chocolate mug cake

  • 3 tablespoons blanched almond flour finely ground, not almond meal
  • 1 1/2 tablespoons granulated erythritol or preferred keto granular sweetener, to taste
  • 1 tablespoon unsweetened cocoa powder
  • 1 large egg room temperature if possible
  • 2 tablespoons unsweetened almond milk or other unsweetened low-carb milk alternative
  • 1 tablespoon melted butter or melted coconut oil
  • 1/2 teaspoon pure vanilla extract
  • 1/4 teaspoon baking powder gluten free
  • 1 pinch fine sea salt

Optional keto toppings

  • 1 tablespoon sugar-free dark chocolate chips keto-friendly, optional
  • 2 tablespoons whipped heavy cream unsweetened or sweetened with keto sweetener, optional

Instructions

  • Add the almond flour, erythritol, unsweetened cocoa powder, baking powder, and salt to a microwave-safe mug and stir with a fork until well combined and no lumps of almond flour remain.
  • Add the egg, unsweetened almond milk, melted butter, and vanilla extract to the mug and mix thoroughly until a smooth, thick batter forms and there are no streaks of egg.
  • If using sugar-free chocolate chips, gently fold them into the batter, making sure they are distributed evenly throughout the mug.
  • Microwave the mug cake on high for about 60 seconds, then check the center and continue microwaving in 10 second increments until the top is just set but still slightly soft and fudgy in the middle.
  • Let the mug cake cool for 1 to 2 minutes to set and avoid burning your mouth, then top with whipped cream or your favorite keto-friendly toppings and enjoy warm straight from the mug.

Notes

Microwave strengths vary, so adjust the cooking time to avoid overcooking, which can make the cake dry or rubbery. For a slightly gooier center, stop microwaving as soon as the top looks just set. To reduce carbs further, skip the chocolate chips and use a zero-carb sweetener such as pure stevia or monk fruit drops to taste. This mug cake is best eaten fresh, but you can pre-mix the dry ingredients in small jars for a faster fix later by simply adding the wet ingredients and microwaving when a craving hits.
