Cauliflower Bites

  • 1 head cauliflower cut into small bite-size florets, about 4 cups
  • 3 tablespoons olive oil
  • 1 large egg lightly beaten
  • 3/4 cup finely grated parmesan cheese grated from a block for best texture, not pre-shredded
  • 2 tablespoons grated parmesan cheese for sprinkling on top after baking, optional
  • 2 cloves garlic minced
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried Italian seasoning or dried oregano

Instructions

  • Preheat the oven to 425°F and line a large baking sheet with parchment paper for easy cleanup.
  • Trim the cauliflower and cut it into small, even bite-size florets so they roast at the same rate and crisp evenly.
  • Add the cauliflower florets to a large mixing bowl and drizzle with the olive oil, tossing until every piece is lightly coated.
  • In a small bowl whisk together the beaten egg, minced garlic, garlic powder, onion powder, dried Italian seasoning, red pepper flakes if using, salt, and black pepper until well combined.
  • Pour the seasoned egg mixture over the oiled cauliflower florets and toss thoroughly until the seasoning clings to each piece.
  • Sprinkle the finely grated parmesan over the cauliflower and gently toss again until the florets are evenly coated and you no longer see dry cheese at the bottom of the bowl.
