Ingredients

  • 1/4 cup finely shredded mozzarella cheese low moisture, part skim
  • 1/4 cup blanched almond flour
  • 2 tablespoons grated Parmesan cheese
  • 1/4 cup yellow onion very thinly sliced and lightly chopped
  • 1 tablespoon heavy cream
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika or sweet paprika
  • 1/4 teaspoon fine sea salt or to taste
  • 1/8 teaspoon ground black pepper or to taste
  • 1 tablespoon melted butter for greasing waffle maker, more as needed

Optional keto dipping sauce

  • 1/4 cup mayonnaise sugar free
  • 2 tablespoons sour cream full fat
  • 1 teaspoon sugar free hot sauce or to taste, for spicy mayo style dip
  • 1/4 teaspoon onion powder for the dipping sauce
  • 1/8 teaspoon fine sea salt or to taste, for the dipping sauce

Instructions

  • Preheat a mini waffle maker according to the manufacturer instructions until it is fully hot and ready to cook.
  • Add the eggs to a mixing bowl and whisk until the yolks and whites are fully combined and slightly frothy.
  • Whisk in the heavy cream, onion powder, garlic powder, smoked paprika, salt, and black pepper until the seasonings are evenly distributed in the egg mixture.
  • Stir in the almond flour and grated Parmesan cheese until a smooth, slightly thick batter forms with no visible dry spots of flour.
  • Fold in the shredded cheddar, shredded mozzarella, and the very thinly sliced and lightly chopped onion until they are evenly dispersed throughout the batter.
  • Lightly brush or spray the hot waffle maker plates with melted butter to prevent sticking and encourage crispy edges.
  • Spoon a portion of the chaffle batter onto the center of the waffle maker, using just enough to thinly cover the plates once closed without overflowing.
