Equipment

  • Mixing bowl
  • Whisk
  • Rubber spatula
  • Cutting board
  • Knife
  • mini muffin tin
  • cooking spray or pastry brush
  • Oven
  • cooling rack

Ingredients

For the pizza bites

  • 1 cup shredded low-moisture part-skim mozzarella cheese plus extra for topping if desired
  • 1/2 cup finely blanched almond flour
  • 2 large eggs room temperature if possible
  • 1/4 cup grated Parmesan cheese
  • 1/3 cup pepperoni mini pepperoni or regular pepperoni chopped into small pieces
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder optional but recommended
  • 1/4 teaspoon crushed red pepper flakes optional for heat
  • 1/2 teaspoon kosher salt or to taste
  • 1/4 teaspoon black pepper freshly ground
  • 1 tablespoon olive oil for greasing the mini muffin tin

For serving (optional but recommended)

  • 1/3 cup low-carb marinara sauce warmed, for dipping
  • 2 tablespoons fresh parsley or basil chopped, for garnish

Instructions

  • Preheat the oven to 375°F and generously grease a mini muffin tin with olive oil or spray to prevent sticking.
  • Chop the pepperoni into small pieces if not using mini pepperoni and set aside.
  • Add the eggs to a mixing bowl and whisk until well combined and slightly frothy.
  • Stir in the shredded mozzarella, almond flour, grated Parmesan, Italian seasoning, garlic powder, onion powder, red pepper flakes, salt, and black pepper until a thick, sticky batter forms.
  • Fold the chopped pepperoni into the batter, reserving a small handful to press on top of the bites for extra crispy edges if desired.
  • Spoon the mixture into the greased mini muffin cups, filling each about two thirds full and gently smoothing the tops.
  • Press a few extra pieces of pepperoni and a pinch of shredded mozzarella on top of each bite if you like a crispier, cheesier finish.
  • Bake for 12 to 15 minutes until the bites are set, the edges are golden, and the cheese is bubbling.
  • If you want extra browning, switch the oven to broil and cook for 1 to 2 minutes, watching closely so the cheese does not burn.
  • Let the pizza bites cool in the pan for 5 minutes, then gently loosen the edges with a knife and transfer to a cooling rack or serving plate.
  • Garnish with chopped parsley or basil and serve warm with warmed low-carb marinara sauce for dipping.
  • For meal prep, cool completely and store in an airtight container in the refrigerator for up to 5 days or freeze in a single layer before transferring to a freezer bag.
  • Reheat the bites in a 350°F oven or air fryer until warmed through for the best texture, or microwave briefly if you prefer a softer bite.

Notes

Use finely blanched almond flour for the best texture and to keep the bites from tasting grainy. Check the nutrition label on your pepperoni and marinara to ensure they are low in carbs and free of added sugars. For a crispier texture, avoid overfilling the mini muffin cups so more edge surface can brown. You can swap part of the mozzarella for shredded provolone or Italian cheese blend to change the flavor profile while keeping the recipe keto. To make these bites ahead for parties, bake and cool completely, then reheat on a parchment-lined baking sheet at 350°F until hot and sizzling before serving. Each serving is calculated as about four bites, depending on the size of your mini muffin tin and how full you pack each cup.
