Ingredients

For the lettuce wraps

  • 8 large leaves romaine hearts or iceberg lettuce rinsed and thoroughly dried
  • 8 slices bacon no sugar added
  • 8 ounces nitrate-free deli turkey breast sliced, no sugar added
  • 1 medium avocado pitted, peeled, and thinly sliced
  • 4 slices tomato from a small firm tomato, seeds removed if desired
  • 4 slices cheddar cheese or Swiss, optional but recommended

For the mayo spread

  • 1/4 cup mayonnaise sugar-free, avocado oil or olive oil based
  • 1 teaspoon Dijon mustard no sugar added
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon sea salt or to taste
  • 1/8 teaspoon black pepper or to taste

Instructions

  • Preheat the oven to 400°F and line a baking sheet with parchment paper.
  • Lay the bacon slices in a single layer on the prepared baking sheet and bake until crisp, about 12 to 18 minutes depending on thickness, then transfer to a paper towel lined plate to drain and cool slightly.
  • While the bacon cooks, rinse the lettuce leaves, pat them very dry with paper towels, and set them aside.
  • In a small bowl stir together the mayonnaise, Dijon mustard, garlic powder, sea salt, and black pepper until smooth and well combined to make the spread.
  • Lay the lettuce leaves flat on a work surface, using two overlapping leaves per wrap if they are small or more flexible.
  • Spread a thin layer of the mayo mixture down the center of each lettuce base, leaving the edges clean for easier rolling.
  • Layer the turkey slices evenly over the mayo on each wrap, followed by a slice of cheese if using, then arrange the avocado slices and tomato slices on top.
  • Break the cooked bacon slices in half if needed and place two halves on each wrap so the bacon is evenly distributed.
  • Fold the sides of the lettuce inward over the filling, then roll from the bottom up to form a snug wrap, securing with a toothpick if needed to hold it together.
  • Serve the lettuce wraps immediately as whole wraps or slice them in half on a slight diagonal for easier handling and a club sandwich style presentation.

Notes

For best texture, assemble the lettuce wraps just before serving so the lettuce stays crisp and the bacon retains its crunch. If prepping ahead, keep the components separate, store the washed and thoroughly dried lettuce wrapped in paper towels in an airtight container, and mix the mayo spread up to two days in advance. You can substitute leftover roasted turkey for deli turkey, and adjust the tomato amount for stricter carb counts or omit it entirely if you need to keep carbs very low. These wraps pair well with cucumber slices, celery, or a simple side salad for a complete keto-friendly meal.
