Ingredients

For the turkey filling

  • 1 pound ground turkey preferably 85% lean for better flavor
  • 2 tablespoons avocado oil or olive oil
  • 1/2 cup red bell pepper finely diced
  • 1/4 cup yellow onion finely diced
  • 3 cloves garlic minced
  • 1 tablespoon fresh ginger finely grated
  • 3 tablespoons coconut aminos or tamari or soy sauce, to taste
  • 1 tablespoon rice vinegar unsweetened
  • 1 teaspoon toasted sesame oil
  • 1/4 teaspoon sea salt or to taste, especially if using low-sodium coconut aminos
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes or a squeeze of Sriracha, optional for heat
  • 2 tablespoons fresh cilantro chopped, optional

For serving

  • 12 leaves butter lettuce or romaine lettuce, washed and patted dry
  • 1 medium lime cut into wedges
  • 1 tablespoon toasted sesame seeds optional garnish

Instructions

  • Prepare the lettuce leaves by carefully separating them, rinsing under cool water, and patting very dry with paper towels, then set them aside on a platter.
  • Place a large skillet over medium heat and add the avocado oil, allowing it to warm until shimmering.
  • Add the diced onion and bell pepper to the skillet and sauté, stirring occasionally, until softened and slightly fragrant, about 3 to 4 minutes.
  • Stir in the minced garlic and grated ginger and cook just until fragrant, about 1 minute, taking care not to let the garlic brown.
  • Add the ground turkey to the skillet, breaking it up with a wooden spoon, and cook until it is no longer pink and begins to brown in spots, about 5 to 7 minutes.
  • If there is excess liquid or grease in the skillet, carefully spoon it off or drain briefly to keep the filling from becoming watery.
  • Return the skillet to medium heat and stir in the coconut aminos, rice vinegar, sesame oil, sea salt, black pepper, and red pepper flakes or Sriracha, coating the turkey mixture evenly.
  • Let the mixture simmer for 2 to 3 minutes, stirring occasionally, until the flavors meld and most of the added liquid has reduced, then taste and adjust seasoning with additional salt, pepper, or heat as desired.
  • Remove the skillet from the heat and stir in the chopped cilantro, if using, for a fresh herbal finish.
  • To assemble a wrap, spoon a few tablespoons of the warm turkey mixture into the center of a lettuce leaf, then top with a squeeze of lime juice and a pinch of sesame seeds, if desired.
  • Fold the sides of the lettuce leaf around the filling to create a handheld wrap and serve immediately, repeating with remaining lettuce and turkey mixture at the table as needed.
  • For meal prep, cool the turkey mixture completely, store it in an airtight container in the refrigerator for up to 4 days, and keep the washed, dried lettuce leaves separate until ready to assemble and eat.

Notes

For a slightly richer filling, you can substitute part of the ground turkey with ground dark meat turkey or even a small amount of ground pork while remaining keto friendly. To keep carbs low, measure the bell pepper and onion carefully and avoid adding sweet sauces or sugars to the mixture. If you prefer extra crunch without many carbs, add a small handful of thinly sliced green onion or shredded cabbage on top when assembling the wraps. These wraps are best assembled just before serving so the lettuce stays crisp, but the filling reheats well in a skillet over medium-low heat with a splash of water if needed.
