  • 1/4 cup unsalted butter softened
  • 2 tbsp coconut oil melted
  • 2 tbsp lime juice freshly squeezed (or key lime juice)
  • 1 tsp lime zest freshly grated
  • 3 tbsp powdered erythritol or preferred keto sweetener
  • 1/2 tsp vanilla extract
  • pinch salt

Instructions

  • In a mixing bowl, beat softened cream cheese and butter together using an electric mixer until smooth and creamy.
  • Add melted coconut oil, lime juice, lime zest, erythritol, vanilla extract, and a pinch of salt. Mix until fully combined and fluffy.
  • Spoon the mixture evenly into a silicone mold or mini muffin pan lined with paper cups.
  • Freeze for 30 minutes or refrigerate for 1 hour, until firm.
  • Pop out of molds and store in an airtight container in the refrigerator or freezer. Enjoy chilled.

Notes

For a creamy dessert-style texture, let the fat bombs sit at room temperature for 5 minutes before eating. Add a dusting of lime zest on top for presentation.
