  • 8 oz cream cheese softened
  • 1/2 cup sour cream
  • 1 oz ranch seasoning powdered, low-carb
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 2 large eggs lightly beaten
  • 1 1/2 cups shredded cheddar cheese divided
  • 8 slices bacon cooked and crumbled
  • 1/4 cup green onions chopped

Instructions

  • Preheat your oven to 375°F. Lightly grease a 9×13-inch baking dish with butter or a non-stick spray to ensure easy serving and cleanup.
  • In a large mixing bowl, add the softened cream cheese and sour cream. Use a spatula or hand mixer to blend until completely smooth with no lumps remaining. Add the ranch seasoning, garlic powder, black pepper, and lightly beaten eggs. Continue mixing until the mixture becomes creamy and well combined. Scrape down the sides of the bowl as needed to make sure everything is fully incorporated.
  • Fold in the shredded chicken, being sure to coat every piece thoroughly with the creamy mixture. Add half of the shredded cheddar cheese and half of the crumbled bacon. Stir gently to distribute the ingredients evenly without overmixing.
  • Transfer the mixture into the prepared baking dish and spread it out evenly using a spatula. Make sure the top is level so the casserole bakes uniformly.
  • Sprinkle the remaining cheddar cheese evenly over the top. Finish by scattering the remaining crumbled bacon across the surface for added flavor and crispiness.
  • Bake uncovered for 25–30 minutes, or until the casserole is bubbling around the edges and the cheese on top is melted and lightly golden. If you prefer a more browned top, broil for 1–2 minutes at the end, watching closely to avoid burning.
  • Remove the casserole from the oven and allow it to rest for 5 minutes. Sprinkle chopped green onions over the top just before serving for a fresh, flavorful finish.

Notes

For extra heat, add a pinch of cayenne or diced jalapeños. This dish reheats wonderfully and is excellent for meal prep. Pair with a side salad or steamed low-carb vegetables.
