Equipment

  • Cutting board
  • Chef's knife
  • Small mixing bowl
  • spoon or spatula

Ingredients

For the lettuce wraps

  • 4 leaves romaine or butter lettuce large, washed and patted dry
  • 6 ounces smoked salmon thinly sliced
  • 4 ounces cream cheese softened, full fat
  • 2 tablespoons capers drained
  • 1/4 cup red onion very thinly sliced
  • 1/4 medium lemon cut into wedges, for serving
  • 1 tablespoon fresh dill finely chopped, plus more for garnish
  • 1 tablespoon extra virgin olive oil optional, for drizzling
  • 1/8 teaspoon sea salt or to taste
  • 1/8 teaspoon black pepper freshly ground, or to taste

Instructions

  • Add the softened cream cheese, chopped fresh dill, sea salt, and black pepper to a small mixing bowl and stir until smooth and evenly combined.
  • Lay the lettuce leaves flat on a cutting board with the stem end facing you and gently pat them dry again if any moisture remains.
  • Spread an even layer of the herbed cream cheese over the center of each lettuce leaf, leaving a small border around the edges.
  • Arrange the smoked salmon slices over the cream cheese, dividing the salmon evenly among the lettuce leaves.
  • Top the salmon with thin slices of red onion and a sprinkle of capers on each lettuce leaf.
  • Drizzle the wraps lightly with olive oil if using and squeeze a little fresh lemon juice over the filling for brightness.
  • Fold the sides of each lettuce leaf over the filling, then roll from the thicker end to create a snug wrap, tucking in any loose pieces as you roll.
  • Garnish the wraps with additional chopped dill if desired and serve immediately with extra lemon wedges on the side.

Notes

For best texture, assemble these smoked salmon lettuce wraps just before serving, as the lettuce can soften if stored with the creamy filling. To meal prep, keep the lettuce leaves, smoked salmon, and sliced red onion in separate airtight containers and mix the herbed cream cheese up to one day in advance. You can swap the cream cheese for mashed avocado for a dairy free variation, or add thin cucumber slices for extra crunch while keeping carbs low. Each wrap is very filling thanks to the healthy fats, so pair with a simple side salad or a few avocado slices for a complete keto meal.
