Equipment

  • large skillet
  • Wooden Spoon
  • Cutting board
  • Chef's knife
  • measuring spoons
  • Mixing bowl

Ingredients

For the taco meat

  • 1 pound ground beef 80/20 for best flavor, or substitute ground turkey
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika or regular paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon crushed red pepper flakes optional, for heat
  • 3/4 teaspoon fine sea salt or to taste
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons water helps the spices coat the meat
  • 1 tablespoon olive oil or avocado oil, only if using very lean meat

For the lettuce wraps and toppings

  • 8 large leaves romaine lettuce or iceberg leaves, washed and thoroughly dried
  • 1 cup shredded cheddar cheese or Mexican blend, lightly packed
  • 1 medium avocado pitted, peeled, and diced
  • 1/2 cup grape tomatoes halved or quartered
  • 1/2 cup sour cream full-fat, for serving
  • 2 tablespoons fresh cilantro chopped, optional
  • 1 small lime cut into wedges, for serving
  • 1/4 cup sugar-free salsa optional, check that it is no-sugar-added and keto-friendly
  • 2 tablespoons pickled jalapeño slices optional, for heat

Instructions

  • Wash the romaine or iceberg leaves, pat them very dry with paper towels, and chill them in the refrigerator so they stay crisp while you cook the meat.
  • Prep the toppings by shredding the cheddar cheese, dicing the avocado, cutting the grape tomatoes, chopping the cilantro, and arranging the sour cream, lime wedges, salsa, and jalapeños in small bowls for easy assembly.
  • Place a large skillet over medium to medium-high heat and add the olive oil if using, then add the ground beef and break it apart with a wooden spoon as it begins to brown.
  • Cook the meat, stirring occasionally, until it is fully browned and no longer pink, then drain off any excess grease if the pan looks overly oily and return the skillet to the heat.
  • Sprinkle the chili powder, cumin, smoked paprika, garlic powder, onion powder, dried oregano, red pepper flakes, salt, and black pepper evenly over the browned meat and stir to coat.
  • Pour in the water and continue to cook the seasoned meat, stirring often, until most of the liquid has evaporated and the spices form a slightly glossy coating on the crumbles, then remove the skillet from the heat.
  • Taste the taco meat and adjust the seasoning with additional salt or red pepper flakes if desired so the flavor is bold enough to stand out against the cool toppings and lettuce.
  • To assemble, lay a chilled lettuce leaf on a plate, spoon a portion of warm taco meat down the center, and top with shredded cheddar, diced avocado, tomatoes, a dollop of sour cream, cilantro, and a spoonful of sugar-free salsa or jalapeños if using.
  • Squeeze a lime wedge over the fillings, fold the lettuce around the meat and toppings like a taco, and serve immediately while the meat is warm and the lettuce is still cold and crunchy.
  • For a salad-style presentation, chop the lettuce, spread it in bowls, layer on the hot taco meat and toppings, and drizzle with lime juice and any salsa so each bite includes a mix of flavors and textures.
  • For meal prep, cool the cooked seasoned meat completely, store it in an airtight container, keep the lettuce and toppings separate, and reheat only the meat before assembling fresh wraps.

Notes

To keep this recipe strictly keto, always choose full-fat sour cream, real block cheese you shred yourself when possible, and sugar-free salsa with no added sugars or starches. Romaine and iceberg work best because they are sturdy and low in carbs, but butter lettuce can be used for smaller, bite-size wraps. For an even higher fat option, drizzle a little extra olive oil over the meat or add more avocado. If using ground turkey or very lean beef, the added oil helps with both flavor and satiety. Each serving here assumes two large lettuce wraps, but you can stretch the meat further by turning it into a salad bowl over extra chopped lettuce. Net carbs are kept low by limiting the tomatoes and salsa, so adjust those portions carefully if you are following a very strict carb limit.
