Ingredients

For the taco beef

  • 1 pound ground beef (80/20)
  • 2 tablespoons olive oil or avocado oil
  • 2 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon smoked or sweet paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper optional, for heat
  • 1 teaspoon fine sea salt or to taste
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 cup water or beef broth to moisten seasoning

For the salad base

  • 6 cups chopped romaine lettuce cold and crisp
  • 1 cup shredded sharp cheddar cheese
  • 1 medium ripe avocado pitted, peeled, and diced
  • 1/2 cup sour cream full-fat
  • 1/2 cup sugar-free salsa check label for no added sugar
  • 1/4 cup fresh cilantro leaves chopped, optional
  • 2 tablespoons fresh lime juice about 1 lime, plus extra wedges for serving
  • 1/2 cup crushed pork rinds for crunch, optional

Instructions

  • Add the chili powder, cumin, paprika, garlic powder, onion powder, oregano, cayenne, salt, and pepper to a small bowl and stir to make the taco seasoning blend.
  • Heat the olive oil in a large skillet over medium heat until shimmering.
  • Add the ground beef to the skillet and cook, breaking it up with a spatula, until browned and no longer pink.
  • Sprinkle the taco seasoning evenly over the browned beef, pour in the water or broth, and stir well to coat all of the meat.
  • Simmer the seasoned beef for a few minutes, stirring occasionally, until most of the liquid has reduced and the meat is well coated and fragrant, then remove the skillet from the heat.
  • While the beef cooks, place the chopped romaine lettuce in a large serving bowl or divide it among four individual bowls.
  • Top the lettuce with warm taco beef, then sprinkle with shredded cheddar cheese so it can soften slightly from the heat.
  • Add the diced avocado over the salad, then spoon on dollops of sour cream and sugar-free salsa.
  • Scatter chopped cilantro and crushed pork rinds over the top, then drizzle with fresh lime juice to brighten the flavors.
  • Taste and adjust seasoning with additional salt, pepper, or lime juice as needed, then serve immediately while the lettuce is crisp and the beef is still warm.

Notes

For meal prep, store the cooked taco beef, chopped lettuce, cheese, and toppings in separate airtight containers and assemble just before serving to keep the lettuce crisp. Keep avocado separate and toss with a little lime juice to slow browning if preparing ahead. You can substitute ground turkey or pork for the beef and adjust the seasoning to taste. For extra richness, add a drizzle of avocado oil or a few extra slices of avocado to each serving while still keeping carbs very low.
