2tbspolive oil

Instructions
Heat olive oil in a Dutch oven over medium-high heat. Add beef and brown on all sides, working in batches if necessary.
Add the chopped onion and garlic. Cook until softened, about 3–4 minutes.
Pour in beef broth and bring to a simmer. Add mushrooms, celery, thyme, salt, and pepper.
Cover and simmer for 60–75 minutes, or until the beef is very tender.
Sprinkle xanthan gum evenly over the stew and stir well to thicken. Simmer 5 more minutes.
Taste and adjust seasoning. Serve hot.
Notes
For added richness, stir in 1 tablespoon of butter at the end. Keto-friendly veggies such as turnips or radishes can be added for more texture.
