Ingredients

Stew

  • 2 lb beef stew meat cut into 1-inch cubes
  • 2 tbsp olive oil
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 2 cups beef broth low-carb, no sugar added
  • 1 cup mushrooms sliced
  • 1 cup celery chopped
  • 1/2 tsp thyme dried
  • 1 tsp salt
  • 1/2 tsp black pepper

Thickener

  • 1 tbsp xanthan gum for keto thickening

Instructions

  • Heat olive oil in a Dutch oven over medium-high heat. Add beef and brown on all sides, working in batches if necessary.
  • Add the chopped onion and garlic. Cook until softened, about 3–4 minutes.
  • Pour in beef broth and bring to a simmer. Add mushrooms, celery, thyme, salt, and pepper.
  • Cover and simmer for 60–75 minutes, or until the beef is very tender.
  • Sprinkle xanthan gum evenly over the stew and stir well to thicken. Simmer 5 more minutes.
  • Taste and adjust seasoning. Serve hot.

Notes

For added richness, stir in 1 tablespoon of butter at the end. Keto-friendly veggies such as turnips or radishes can be added for more texture.
