Instructions
Preheat waffle maker and lightly grease with nonstick spray or a bit of olive oil.
In a large mixing bowl, combine ground chicken, Parmesan, mozzarella, egg, garlic powder, onion powder, Italian seasoning, salt, and pepper. Mix well until evenly blended.
Scoop about 1/3 cup of the chicken mixture into each waffle section, spreading evenly. Close the waffle maker and cook for 5–6 minutes or until golden brown and cooked through (internal temp 165°F / 74°C).
Carefully remove the chicken “waffles” using tongs and repeat with remaining mixture. Keep cooked waffles warm in a low oven if needed.
Serve hot, garnished with parsley and a drizzle of sugar-free maple syrup, or pair with a dollop of sour cream for a savory option.
