Pork Rind Onion Rings
1large onioncut into thick rings
2cupscrushed pork rindsfine crumbs
2eggsbeaten
1tsppaprika
1/2tspsalt

1lbground beef80/20 preferred
1tspsalt
1/2tspblack pepper
4slicescheddar cheese
1avocadosliced
2tbspsugar-free ketchup
Instructions
Heat oil in a skillet over medium heat. Set up two bowls: one with beaten eggs, one with pork rind crumbs mixed with paprika and salt.
Dip onion rings into egg mixture, then into pork rind crumbs. Press firmly to coat.
Fry onion rings 2–3 minutes per side until golden and crispy. Drain on paper towels.
Season ground beef with salt and pepper. Form into 4 patties and cook in the skillet 3–4 minutes per side. Top each patty with cheddar to melt.
Stack patties with sliced avocado and sugar-free ketchup. Serve with pork rind onion rings on the side.
Notes
For extra crunch, place finished onion rings in the air fryer for 2 minutes. Add bacon or a fried egg to the burger stack for more keto-friendly richness.
