Ingredients

For the chicken

  • 1 1/2 pounds boneless skinless chicken breasts trimmed
  • 4 cups water or low-sodium chicken broth for poaching, or use grilling as preferred
  • 1 teaspoon fine sea salt for poaching liquid

For the creamy keto dressing

  • 3/4 cup mayonnaise sugar-free, preferably avocado oil based
  • 2 tablespoons fresh lemon juice plus more to taste
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons fresh chopped parsley
  • 1 tablespoon fresh chopped dill or 1 teaspoon dried dill
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder

  • 1/2 teaspoon freshly ground black pepper or to taste

Instructions
