Ingredients

Instructions

  • Place the mixing bowl and beaters in the freezer for about 10 minutes so they are well chilled before whipping the cream.
  • Add the cold heavy whipping cream, unsweetened cocoa powder, powdered erythritol, vanilla extract, and sea salt to the chilled bowl.
  • Begin mixing on low speed until the cocoa and sweetener start to dissolve into the cream and no dry pockets remain.
  • Increase the mixer speed to medium-high and whip the mixture until it becomes thick, fluffy, and forms medium to firm peaks, being careful not to overwhip it into butter.
  • Taste the mousse and, if desired, gently beat in a small additional amount of powdered sweetener to adjust the sweetness, avoiding overmixing.
  • Spoon the mousse into four small serving dishes or jars, smoothing the tops with a spatula.
  • Refrigerate the mousse for at least 30 minutes to help it firm up and develop its silky, airy texture.
  • Before serving, top with a dollop of softly whipped cream and a sprinkle of sugar-free dark chocolate shavings if using, then serve chilled.

For the smoothest texture, use powdered rather than granular erythritol so it dissolves completely into the cream. If you prefer a stevia-based sweetener, start with a very small amount and add more to taste, since stevia is significantly sweeter than erythritol.
